This sausage traybake is a simple and flavourful dish that is made by baking Richmonds Meat-Free Tasty Sausages and vegetables together in a single pan. What you will need:
- 2 red onions
- 1 red pepper
- 1 green pepper
- 500g new potatoes, halved if large
- 3 tbsp olive oil
- 4 large tomatoes, quartered
- 1 pack 8 Richmond Meat Free sausages
- Salt and freshly ground black pepper
Preheat the oven to 180°C (350F)
Cut the red onions into 8 wedges and the peppers into bitesize pieces, place in an oven proof dish with the new potatoes. Drizzle over the olive oil and shake the dish to coat the vegetables, season with salt and pepper then cook in the oven for 30 minutes.
Remove the dish from the oven, stir in the tomato quarters then place the sausages on top of the vegetables and return to the oven and cook for a further 15-18 minutes until the sausages are golden brown.
Remove from the oven and serve.
