Recipe  Idea– Cauliflower Cheese

Ingredients

For Roasted Cauliflower

  • 1 kg cauliflower florets (1 1/2 medium, 1 very large, or 2 small cauliflower heads)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper

For Mornay Sauce or Cheese Sauce

  • 4 tbsp unsalted butter
  • 3½ tbsp all-purpose flour
  • 1 cup cream
  • 1 cup full-fat milk
  • ½ cup grated Gruyere cheese
  • 1 cup grated Red Leicester or Cheddar cheese
  • ¼ tsp nutmeg powder
  • Salt

For Topping

  • ½ cup grated Gruyere cheese
  • ½ cup grated Red Leicester or Cheddar cheese or any other cheese that melts well

Preparation

Roasted Cauliflower

  • Preheat oven to 220°C.
  • Add oil, salt, and pepper to the cauliflower florets and then spread them on a large baking tray.
  • Roast them in the oven for about 20 minutes without turning. Remove from oven – the cauliflower will have some colour to it, but they should be firm.
  • Turn down the temperature of the oven to 180°C.

Mornay Sauce or Cheese Sauce

  • Heat milk and cream till hot – you can do it on the stove or the microwave.
  • Add the butter to a big saucepan over medium heat. Add the flour to it and stir for 3 minutes. Pour half the milk into it and keep stirring continuously. When the mixture is thickened, add the remaining milk. Stir for another minute and turn off the heat. The mixture should coat with a wooden spoon.
  • Keep the heat turned off and add in the grated cheeses, salt and nutmeg and stir. The mixture will now thicken further like a thick sauce.
  • Add cauliflower and toss them to coat in the sauce.
  • Transfer the mixture to a large baking dish.
  • Sprinkle over gruyere and then the Red Leicester cheese over it.
  • Bake at 180°C for 30 minutes or till the cheese is melted and bubbling and cauliflower are golden.
  • Serve along with the cocktail banger sausage rolls.

Did You Know?

Cameron's Butchers is an approximately 90-year-old company that was established in 1932 in Paisley, Scotland. Later in 1951, brothers Bill and Frank Cameron opened their shop in the US. They opened Cameron's Market, a Scottish butcher shop in New Jersey, in 1955. Later in 1973, the families and businesses were relocated to the sunny gulf coast area of S.W. Florida. It was here that Cameron’s British Foods was established, and several items from Ireland and UK were imported for this shop. The business is now taken by Don Cameron and Donald Cameron Jr., who are the third and fourth generations in this business.
