Recipe Idea– Kale and Warm Bacon Vinaigrette Salad

Ingredients

  • 750 gm kale, washed and dried
  • 1/3 cup crispy chickpeas
  • 1/3 cup toasted nuts (walnuts, pecans, or almonds)
  • 6 slices bacon
  • 1/3 cup grated Parmesan cheese
  • 2 Tablespoons minced shallots
  • 1 tablespoon light brown sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper

Preparation

  • Strip the leaves of kale from their stem, roll them up and cut them into strips. Place the kale strips in a large bowl, and to it add the crispy chickpeas, toasted nuts and Parmesan cheese.
  • In a large pan, cook the bacon slices over medium heat. Once done, transfer the bacon to a paper-towel but leave the drippings and crunchy bits in the pan. If the drippings are not enough (less than 3 tablespoons), then add some olive oil to the pan. Now add the shallots and sauté for a minute. Add the vinegar, brown sugar and mustard. Stir continuously, and while doing so, scrape any brown bits from the pan. Turn off the heat and season the vinaigrette with salt and pepper.
  • Chop the bacon and add it to the bowl of kale. Pour in the warm dressing and serve with a bacon roll.

Did You Know?

Sausage rolls are a hugely popular snack in the United Kingdom. Sausage rolls gained their popularity as a street snack back in the 1800’s and have since been fondly consumed by the English throughout the nation. They are so popular that a famous food joint, Greggs, sells about 2 million sausage rolls each week. In 2012 the British government wanted to introduce a "Pasty Tax" on hot takeaway food, which included sausage rolls. This caused much panic amongst the common public, and they responded so negatively that the government was forced to abandon this plan.
