How to Cook West of Ireland White Pudding?

Fry – Slice the product into discs approximately 1cm thick. Heat some oil in a pan and add the slices of white pudding. Allow the white pudding to cook for 3-4 minutes on each side.

Grill – Slice the product into discs approximately 1cm thick. Place all the white pudding slices on a tray under a pre-heated grill. Allow the white pudding to cook for 3-4 minutes on each side.

Microwave – Slice the product into discs approximately 1cm thick. Keep the heat of the microwave on full power and cook the white pudding slices for 60 – 90 seconds.

Oven – Slice the product into discs approximately 1cm thick. Preheat the oven to 190°C. Oil a baking tray and place the white pudding slices on it. Allow the white pudding to cook for 6-8 minutes, flipping it once in between.

Ingredients

  • 2 white pudding
  • 1 yellow pepper
  • 1 red pepper
  • 2 tsp cumin seeds
  • 400 g carrots puree
  • 3 tbsp olive oil
  • juice of 1 orange
  • salt and pepper for seasoning
  • circle mould
  • Chervil for garnishing

 

Preparation

  • Quarter the peppers, clean all the seeds from within, and cut them into strips.
  • In a frying pan, add 2 tbsp olive oil and add the cumin seeds. When they crackle, add the peppers and sauté for 10 minutes on medium heat. Lower the heat, add the orange juice, and cook for 10 more minutes. Season with some salt and pepper.
  • Slice the white pudding and fry them in a pan with 1 tbsp of olive oil. Brown from both sides on medium to low heat.
  • Cut the white pudding into slices. Heat a pan with 1 tablespoon of olive oil and brown the slices on 2 sides.
  • Heat the carrot puree.
  • Use the circle mould to assemble the timbales. Begin by adding the carrot puree and place some slices of white pudding over it. Next, add the peppers and add the remaining slices of pudding.
  • Garnish with chervil and serve hot.
