Ingredients

  • 1 large cauliflower broken into pieces
  • 100g strong cheddar, grated
  • 500ml milk
  • 50g butter
  • 4 tbsp flour
  • 2-3 tbsp breadcrumbs, optional

Preparation

  • Boil water in a large pot and add the broken cauliflower pieces to it. Cook for 5 minutes or till they are cooked.
  • Preheat the oven to 220 °C.
  • Drain the cauliflower and spread it on a large baking/ovenproof dish
  • Add the milk in a pan and turn on the heat. To this, add butter and flour. Keep the heat medium to low.
  • Use a whisk and keep whisking the mixture till the butter is melted and the mixture comes to a boil. At this stage, the sauce will thicken. Continue whisking for another 2 minutes till the sauce begins to bubble.
  • Turn off the heat and stir in the grated cheddar, saving just a little. Pour the mixture over the cauliflower and sprinkle the leftover cheddar and the breadcrumbs over it.
  • Bake for 20 minutes. Serve hot with the chicken and leek pie!

Did You Know?

The English people love pies because they have a deeper meaning to them. For centuries pies have brought people together, essentially a symbolic representation of union, love, and comfort. In ancient times they were cooked in large pots with fire. Ancient bakers made pies from a paste of flour and water that helped in conserving the juices from the meat. Families have passed down their recipes for a long which have evolved and now have different variations. Yet, pies continue to be a comfort food that is especially enjoyed when families come together to spend time.
