Recipe Idea: Cheese and onion pasty

Ingredients

  • 40g unsalted butter
  • 1 medium brown onion, finely diced
  • 1 medium waxy potato (about 250g),
  • 200g cheddar, grated
  • 2-3 tbsp double cream (optional)

For the pastry

  • 300g plain flour, plus extra to dust
  • 200g cold unsalted cubed butter
  • 40ml milk
  • 1 egg, lightly beaten
  • 2 tsp white wine vinegar
  • 1 egg, beaten, to glaze
  • 1 tsp salt

Preparation

  • Step 1 - To make the pasty, mix flour and salt in a mixing bowl until the mixture has the same texture as breadcrumbs. Then, stir the mixture in egg, milk, and vinegar to make a dough that should be soft but not sticky. Set aside the dough in the fridge for around 30 minutes.

  • Step 2- To make the filling, melt the butter in a pan over medium heat and add onions to it. Cook for around 10 minutes and stir regularly. If it looks dry, water can be added. Add potatoes to the onions and cook for another 5 to 10 minutes. Set aside to cool.

  • Step 3- Heat the oven to 180ºC fan/gas 6 and roll out one pasty piece on a floured surface.

  • Step 4 - Now, stir the cream and cheddar through the potato mixture and season it with black pepper and salt. Put the filling into one half of the pastry and leave a 3 cm border around the edges.

  • Step 5- Brush the borders with beaten eggs and close the filling. Use a fork to poke the pastry so that the steam can properly escape, and then bake it for around 25 to 35 minutes until it gets golden. Leave it for 1 minute standing time and serve hot.
