How to Cook Winston’s Irish Brand White Pudding?

Fry – Slice the product into discs approximately 1cm thick. Heat some oil in a pan and add the slices of white pudding. Allow the pudding to cook for 3-4 minutes on each side.

Grill – Slice the product into discs approximately 1cm thick. Place all the pudding slices on a tray under a preheated grill. Allow the white pudding to cook for 3-4 minutes on each side.

Microwave – Slice the product into discs approximately 1cm thick. Keep the heat of microwave on full power and cook the white pudding slices for 60 – 90 seconds.

Oven – Slice the product into discs approximately 1cm thick. Preheat the oven to 190°C. Oil a baking tray and place the white pudding slices on it. Allow the pudding to cook for 6-8 minutes, flipping it once in between.

Recipe Idea– White Pudding Fritters with Spicy Bramley Apple Ketchup


  • 250 gm white pudding
  • 500g Bramley apples, peeled, cored, and chopped roughly
  • 150g of Demerara sugar
  • 1 banana shallot
  • 1 bunch of rocket
  • 250 ml apple cider vinegar
  • 50g of plain flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp extra virgin olive oil
  • 1 litre vegetable oil for frying
  • Salt to taste
  • Water



  • For the Ketchup – In a pan, put some olive oil and fry the shallot. Once it is soft, add the apples and cook for 2 minutes. Add the demerara sugar, apple cider vinegar, ground nutmeg, ground cinnamon, and some salt to taste. Reduce the heat to low and cook the mixture uncovered for 30 minutes until the apples are soft and the ketchup is reduced. Turn off the heat and set aside to cool. Later, keep it in the fridge to chill.
  • For the Fritter Batter – In a bowl, add the flour, baking powder, and some salt. Add some water and whisk thoroughly to make a smooth batter.
  • For the Fritters – Cut the white pudding into 1 cm thick slices and set aside. In a deep-fryer or a heavy-based pan, add the vegetable oil till hot or 180 °C. Dip the white pudding slices in the batter, drain the excess batter, and place in the fryer. Don’t overcrowd the pan. Fry them in small batches for around 4 minutes. Once done, remove and place on a kitchen towel to drain excess oil.

Season the fritters with some salt and serve hot with the spicy Bramley apple ketchup.

Winston’s Irish Brand White Pudding was founded by a couple – Mary and Michael Winston Sr. They were from County Roscommon but were immigrants in Chicago, USA. Michael Winston worked as a butcher in the stockyards and soon came up with the idea of making authentic Irish-style black and white puddings, sausages, soda bread and Irish bacon. Even though the couple stayed in the US they retained the authentic Irish recipe while making the sausages and bread.
