Chicken Curry with McDonnell's Sauce

Ingredients:
  • 700g to 800g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 can, or 400g diced tomatoes
  • 1 bell pepper diced
  • 1 cup frozen peas
  • ½ cup McDonnell's Curry Sauce
  • 1 teaspoon curry powder
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • 1 teaspoon ground cumin
  • Salt and pepper
  • Fresh cilantro, chopped, for garnish

 

Instructions:

Take a large pan or skillet and heat the oil over medium heat. Add the chopped garlic and onion. Sauté till they are soft.

Add the chicken pieces and let them get brown from all sides.

Add the diced bell pepper, curry powder, coriander, cumin, turmeric, salt and pepper. Cook for 2-3 minutes until the spices are aromatic.

Pour in the McDonnell's Curry Sauce. Stir to coat the chicken and vegetables evenly. Lower the heat and let it cook for a few minutes.

Add the diced tomatoes to the pan. Stir well and simmer for about 10 to 15 minutes till the chicken is cooked fully and the flavours mix together.

Add the frozen peas in the last 5 minutes of cooking. Peas tend to cook quickly; this is why they should be added towards the end. This ensures that they are not overcooked and they retain their colour too.

If necessary, taste and adjust the seasoning. You can add a small sprinkle of cayenne pepper or chili powder if you want your curry hotter.

When the chicken is cooked properly, garnish it with chopped fresh cilantro. You can serve the curry with rice or bread.
